Brinjal Gosthu

Ingredients
  • 6 small brinjals,cut into wedges
  • onions - 1 medium size
  • 1 tsp Chilli powder
  • A pinch of turmeric
  • tamarind - lemon size (small)
  • 3 sprigs of curry leaves
  • 1/4 cup Oil
  • Salt
For Gosthu podi
  • 3 tbsp of Coriander seeds
  • 1 tsp of Cumin seeds
  • 2 tbsp of Bengal gram
  • 1/2 tsp of Fenugreek seeds
  • A small piece of asafoetedia
  • 5 - dry chilli
  • 1 tsp oil
Method
  1. Heat oil and fry asafoetedia,fenugreek seeds,bengal gram,cumin seeds,corainder seeds
  2. and chillies and grind them together to make Gothsu Podi.
  3. Soak the tamarind in 1 cup of water .
  4. In a kadai,heat a tsp of oil and fry the onions till transculent and set them aside.
  5. In the same kadai,heat a tablespoon of oil and fry the brinjal wedges for a min.Add 1/2 cup water .Cover and cook till mushy...
  6. Gently mash the cooked brinjal with masher or with cooking ladle.
  7. Extract the tamarind juice.Add salt,chilli powder,turmeric powder and onion to the tamarind juice and mix them all together,Bring this mixture to boil in a separate pan.
  8. To the gothsu podi add 1/4 cup water and dissolve them to make it lump free.Add the brinjal and the gothsu mixture and stir well,and added to the tamarind boil. The Gosthu will thicken now.Add 1/4 cup oil and the curry leaves.Cook for a min and stir and serve .
  9. Goes well with any type of biryani.
