- 6 small brinjals,cut into wedges
- onions - 1 medium size
- 1 tsp Chilli powder
- A pinch of turmeric
- tamarind - lemon size (small)
- 3 sprigs of curry leaves
- 1/4 cup Oil
- Salt
For Gosthu podi
- 3 tbsp of Coriander seeds
- 1 tsp of Cumin seeds
- 2 tbsp of Bengal gram
- 1/2 tsp of Fenugreek seeds
- A small piece of asafoetedia
- 5 - dry chilli
- 1 tsp oil
Method
- Heat oil and fry asafoetedia,fenugreek seeds,bengal gram,cumin seeds,corainder seeds
- and chillies and grind them together to make Gothsu Podi.
- Soak the tamarind in 1 cup of water .
- In a kadai,heat a tsp of oil and fry the onions till transculent and set them aside.
- In the same kadai,heat a tablespoon of oil and fry the brinjal wedges for a min.Add 1/2 cup water .Cover and cook till mushy...
- Gently mash the cooked brinjal with masher or with cooking ladle.
- Extract the tamarind juice.Add salt,chilli powder,turmeric powder and onion to the tamarind juice and mix them all together,Bring this mixture to boil in a separate pan.
- To the gothsu podi add 1/4 cup water and dissolve them to make it lump free.Add the brinjal and the gothsu mixture and stir well,and added to the tamarind boil. The Gosthu will thicken now.Add 1/4 cup oil and the curry leaves.Cook for a min and stir and serve .
- Goes well with any type of biryani.
